Maltitol is a sugar alcohol (a low-calorie, slowly digestible carbohydrate) derived from maltose. It's about 90% as sweet as table sugar but has a third of the calories and is often used in sugar-free, low-calorie and diabetic foods. An organic, low-glycemic cane sugar option. Maltitol is more and more famous as a new excipient in chocolates and baked products to provide sweet taste without giving rise to any sensorial disparity (sweetness, flavor or organoleptic).
