What CHRISTAKIS S.A. now call feta was known to ancient Greeks, at least since Homer&＃039;s era, as there were several references to it in the Odyssey. The myth has it that the cyclop Polyphemus was the first cheese manufacturer. Carrying the milk that he collected from his sheep in animal-skin bags, he realized, to his great surprise, that days later the milk had become a solid, savory and preservable mass. In 1890 Dimitrios Christakis started manufacturing feta cheese in a small workshop, in the geographic area of Likos, Edessa, Greece. He collected the milk for the production of feta from his own animals (sheep, goats) and from his neighbors� animals. Many years have passed since then. Christakis�s descendants using their own sweat and hard work, build the company to what is now known as Christakis Dairy SA. Every year Christakis Dairy becomes more technologically advanced. The production of feta and other cheeses has become more and more automated. This way the quality and consistency of every batch is guaranteed. The company uses Inox tankers for the transport of milk, which is collected from all the producers of milk in the State of Pela. The facilities include, biological cleaning, and a quality control chemical lab. Human error has been removed out of the production process. Christakis Dairy is one of the top producers of Feta and Batzio cheese in Greece and the European Union, not just in quantity but most importantly in top quality.
